Albert and Blanca Vasquez have always loved good, home-style Mexican food. Unfortunately because Mexican cuisine is prepared with lard, a by product of pig fat, it was hard to find restaurants where Blanca, a vegetarian, could eat. So in 1989 Albert and Blanca introduced El Saguarito.

They modified family recipes, replacing traditional lard with Canola oil with a balance of herbs and spices. Even their homemade tortillas are made without lard-yet none of the flavor is lost. Albert and Blanca are proud to offer one of the first restaurants in Tucson to use Canola oil exclusively in the preparation of their food and tortillas. The family is also proud to offer their Corazon Contento (Happy Heart) menu. Developed under the guidance and supervision of skilled profisionals to provide heart-healthy meals for Mexican food lovers. This special menu is just one example of the Vasquez family's goal of making their restaurant the Healthy Mexican Food alternative.
